- 1 chopped medium onion

- 1 diced poblano chili
- ½ cup diced mushrooms
- 2 cups frozen corn
- 1 can pinto beans
- 1 can black beans
- ½ cup fresh diced tomatoes (or canned)
- Your preferred dose of CBD oil
- 1 ½ cups vegetable broth
- Salt and pepper to taste
- Cheese, sour cream, or cilantro to top (optional)
Heat the vegetable oil in a large saucepan over medium heat. Add the chopped onion and cook for 1-2 minutes until they become aromatic. Stir in garlic, chili powder, cumin, and poblano. Cook for another 2-3 minutes until tender and aromatic. Add the mushrooms and tomatoes and continue to sauté over medium heat. Add the corn and stir for another 2-3 minutes. Now, add in the beans, tomatoes, and 1 ½ cups of vegetable broth to the saucepan. Stir and reduce heat to medium-low. Add salt and pepper to taste.
When the chili is thick, about 20 minutes later, stir in your preferred dose of CBD oil. You want to add it towards the end of the process, once you’ve lowered the heat on your food.
